Whole Wheat Blueberry Pancakes
- 1 cup flour (whole wheat or a mix of wheat, rye, buckwheat, oats, etc)
- 1 teaspoon baking powder
- 1 cup Fresh Goat's Milk
- 1 egg
- 1 tablespoon oil
- 1 teaspoon ground flaxseed
- Blueberries (optional - can also add chopped bananas and nuts or
peaches)
Beat all ingredients except for berries. Gently fold in blueberries. Pour small amounts of batter on preheated griddle or frying pan. Cook until bubbles form on top and bottom is golden brown and then flip. Remove from heat when both sides are golden brown. Top with fresh fruit and whipped cream or maple syrup, or jelly and butter.... Lots of great toppings.
Recipe can be doubled (or multiplied more) to make more pancakes. For our family, we usually do increments of 6-8. Leftovers are great for on-the-go food. They can also be frozen to be re-heated in the toaster. A perfect food to prepare ahead of time for kidding season.
