Layered Mexican Dip
- 3-4 c. cooked pinto beans, slightly mashed
- ½ c. sour cream
- ½ c. plain yogurt
- 1 T. taco seasoning
- 3 avocados, mashed (or guacamole)
- 1 c. tomatoes, chopped
- Shredded cheddar or queso blanco cheese
- 1 small head iceberg lettuce, shredded
Layer beans on the bottom of a dish. In a separate bowl mix the sour cream, yogurt and taco seasoning. Spread this mixture evenly over beans. Next spread the mashed avocado or guacamole on top. Sprinkle chopped tomatoes over this and top with lettuce & cheese. Serve cold with tortilla chips. You can also add cooked ground beef or shredded chicken with taco seasoning.
